Mango & passionfruit squares

These are simple to make, no bake, refined sugar free and gluten free!

INGREDIENTS:

Base:
✅ 1 cup coconut flour
✅ 1/4 cup gluten free oats
✅ 1/4 cup maple syrup @greenlifewarehouse
✅ 3-4 tbsp coconut oil, melted @naturalrawc

Filling
✅ 1 cup frozen mango
✅ 150g passionfruit yoghurt
✅ 250g light cream cheese
✅ 2 tbsp maple syrup (optional if you like it extra sweet)

METHOD:


1. For the base, simply mix all base ingredients together until well combined and flatten into a lined square slice tray, using a fork to press it down. Pop base in the fridge while you make the cheesecake layer
2. For the cheesecake layer, add your frozen mango, cream cheese, yoghurt and maple syrup into a blender and blitz until smooth.
3. Pour the cheesecake mixture over your base, now freeze for 2-3 hours.
4. When set, chop into 8-10 squares, top with some fresh passionfruit pulp to serve (optional) and enjoy 😊
